bawang merah
7 siung
bawang putih
4 centimeter
jahe
4 centimeter
kunyit
1 sdt
ketumbar
3 sdm
air asam (asam jawa)
0 secukupnya
garam

  1. Sayat bagian perut bandeng. Cuci bersih bandeng lalu tiriskan.
  2. Lumuri bandeng dengan ragi dan garam. Diamkan selama 1 jam.
  3. Olesi bandeng dengan bumbu halus hingga rata.
  4. Tuangkan 1 liter air dalam panci bertekanan (pressure cooker). Taruh saringan di atasnya.
  5. Taruh bandeng berbumbu di atas saringan. Beri daun salam dan lengkuas.
  6. Masak hingga panci berdesis. Masak selama 1 jam
  7. Dinginkan panci, buka tutupnya. Tuangi air kembali dan masak kembali selama 30 menit sejak panci berdesis hingga air habis dan bandeng lunak.
  8. Angkat dan tiriskan. Sajikan bersama sambal dan lalapan.
